In Israel, there are more than a few opportunities for short courses. at the Hebrew University, for example, you can find Music studies for 1 semester or one year. (Jerusalem Sounds) Music major and minor can apply with 28+ credits and a minimum 3.0 (B) GPA. you can also find different short courses that change every year such as languages, religion, and more.

at Tel Aviv university you may also find summer programs: Cyber security, Smart cities, and more.

Jewish Studies: Masa (Israel journey) - offers a few Jewish programs with Hebrew lessons. The University of Haifa offers offers semestrial or yearly programs that include courses in Jewish philosophy, the Holocaust, rabbinic literature and more.

Each course is different by costs, Duration, and terms for application. I highly recommend directly contact the relevant institutions for you and find out all the details.
