There are a few institutions in Israel which offer different short and long term courses in the field of agriculture, among them: The Arava Institute, The Golda Meir Training Center, The Center of International Agriculture Development Cooperation and more.
I'm not sure all of them offer fruit technology studies so you'll have to contact them directly to find out.
