There are a few schools and institutes in Israel that offer short term courses in the field of agriculture (which include green house and organic farming), among them: The Arava Institute, The Golda Meir Training Center, The Center of International Agriculture Development Cooperation and more.

Each school and institute have different programs, some shorter or longer than others so Iv'e attached a link a at the end of my message that will send you to an article about the different schools, institutes and programs you can choose from and hopefully help you find the best one for you.
I advise you to contact all of them because as i said before each course and program is different so one might offer something the other can't.
