There are a few schools in Israel which offer Arabic studies, among them: The Hebrew University and The Center for Jerusalem Studies.

Each of the schools I've mentioned above offers a different program but in general they focus on Palestinian Arabic and Modern Standard Arabic.

Regarding the volunteering programs you'll have to ask the school in which you will enroll - There are more programs than you can count and they would help you choose the best one for you.
